Homemade Maple Syrup

I was hoping to have a fun Halloween recipe for today, but it didn't quite happen.  We're headed to my parents this weekend which always means lots of cooking, so I'll make a bunch of Halloween recipes to have for the rest of the month.


Homemade Maple Syrup from Blissful Roots

In the meantime, I have a simple recipe that gets used at our house just about every week.  Our weekday breakfasts don't vary too much- cereal, toast, and yogurt.  When the weekend comes, waffles are always on the menu. For some reason pancakes just aren't my thing, but I could eat waffles a lot more often than I should.

Growing up, whenever my mom made waffles she would always make homemade syrup to go with them.  It's just like homemade jam, once you've had it it's almost impossible to go back to store-bought.  Maybe you make your own syrup, and I know my in-law's always bring back real, real syrup from their visits to Vermont, but this is what we love at our house.  

I'm pretty sure this recipe comes from the back of the McCormick Mapleine box, but I usually buy the Kroger brand of maple, and there's no recipe on it.  This is how my mom has always done it.


This syrup isn't as thick as store-bought syrup (which actually, is one of the reasons I like it so much), and the flavor wins by a landslide.  Yes, the sugar content is a bit through the roof, but it's syrup and it's why we love it so much, right?  Our favorite way to use this syrup is on banana waffles.  I'll have to share that recipe soon.
