German Chocolate Cake W/ Whipped Coconut Pecan Topping

My dad is a big chocolate cake fan.  German chocolate cake always reminds me of his birthday.  Somewhere along the way, my mom started adding Cool Whip to the coconut pecan frosting, and it's become a favorite of mine!


I LOVE the topping on this cake.  I could easily eat an entire batch of it myself.  In fact, I may or may not have been known to make the topping without the cake and just keep it in the fridge to eat by the spoonful.  Yes, it's that good!  And it's so easy to make.  You simply mix Cool Whip with the coconut pecan frosting (the frosting you normally put on German chocolate cake).  Easy, easy!  I like using the entire can of coconut pecan frosting with the Cool Whip.  My mom usually uses less frosting with the Cool Whip.  You can experiment with the ratios and decide which is your favorite.

As for the cake, just mix up the cake according to the box directions, or you could use this slightly dressed up version.  I like the dressed up version, but the topping is so good, you really won't notice if the cake is fancy or not.  


Next time I make this I'm going to try to cupcakes.  I like individual serving for desserts.   I'm hoping the topping will work well on top of the cupcakes.  If you try it, let me know how it turns out.
